Vegan Pasta Bolognese

Finely chop the red onion, cherry tomatoes and garlic.

Fry the finely chopped onions in some olive oil until translucent.

Add minced garlic.

Add the tomato paste and crushed stock cube.

Add the chopped tomatoes.

 Add the dried oregano, basil and 1/2 cup of water. Let it simmer for about 5 minutes on medium heat until the tomatoes are cooked.

Rinse the lentils and add them to the tomato sauce, add 1 cup of water and let it simmer for about 10 minutes until the lentils get soft. If it seems dry add some more water.

Have the sauce over pasta, garnish with fresh parsley and olive oil. Serve with some bread on the side. Enjoy!

Ingredients
  1. 8 oz (250 g) dry pasta (I used screws)
  2. 3 tbsp extra virgin olive oil
  3. 1 medium red onion, finely chopped
  4. 4 garlic cloves, minced
  5. 1 vegetable boullion cube, crushed to powder (or use boullion powder)
  6. 1 tbsp tomato paste
  7. 3 ripe tomatoes, chopped
  8. 1/2 cup dry red lentils, rinsed
  9. 1,5 cups water, divided
  10. 1 tsp dry basil
  11. 1 tsp dry oregano
  12. Salt to taste
Instructions
  1. Fry the finely chopped onions in some olive oil until translucent.
  2. Add the minced garlic and fry until the raw flavour is gone.
  3. Add the tomato paste and crushed vegetable boullion cube (or boullion powder).
  4. Stir well and add the tomatoes.
  5. Add the dried oregano, basil and 1/2 cup of the water. Let it simmer on medium heat until the tomatoes are cooked, about 5 minutes or so.
  6. Rinse the lentils and add them to the tomato sauce, add 1 cup of water and let it simmer for about 10 minutes until the lentils get soft. If it seems dry add some more water. Meanwhile cook the pasta according to the instructions on the package.
  7. Taste and check if it needs salt.
  8. Have the sauce over pasta, garnish with fresh parsley and olive oil. Serve with some bread on the side. Enjoy!
