You will need coriander seeds, cumin seeds, dried red chilies, mustard seeds, chana dal, urad dal, curry leaves, black pepper, fenugreek seeds, turmeric powder and asafoedita powder (hing) to make your own aromatic Sambar Powder for your Sambar Curry. Find recipe for the Sambar here.

Roast all of the spices (one at a time) while stirring on medium to low heat, except for the turmeric powder, in a non-stick pan until aromatic. This will take about a couple of minutes for the coriander, cumin, fenugreek, black pepper and dried red chilies. The chana dal needs a litte more time, roast until golden brown. It will take only about 30 seconds for the mustard seeds, curry leaves and the asafoedita.

When all of the spices have cooled down, grind into a fine powder.

Ingredients
  1. 1/2 cup coriander seeds
  2. 2 tbsp cumin seeds
  3. 18-20 dry red chilies
  4. 1 ½ tsp fenugreek seeds
  5. 1 tbsp black pepper
  6. 2 tbsp chana dal
  7. 1 tbsp urad dal
  8. ⅓ cup curry leaves
  9. ½ tbsp mustard seeds
  10. ½ tbsp asafoedita
  11. ½ tbsp turmeric powder
Instructions
  1. Roast all of the spices (one at a time) while stirring on medium to low heat, except for the turmeric powder, in a non-stick pan until aromatic.   2. Leave the roasted spices on a plate and let them cool down.
  3. Grind the spices in a coffee/spice grinder in batches until you have a fine powder.
  4. The sambar powder is ready:)
Notes
  1. This recipe makes about 1 cup of sambar powder.
  2. Store your sambar powder in a cool dark place in an airtight container for up to 2 months.
  3. Use your sambar powder whenever making vegetable Sambar. Use about 1 tbsp for a sambar for 4 persons.
